Quinoa Stuffed Acorn Squash

Quinoa Stuffed Acorn Squash

This is a great, healthy comfort food for fall. Enjoy!

Ingredients:

4 small acorn squash

4 oz of Italian sausage

1/2 cup of carrots, diced (I used food processor)

1/2 cup of onion, diced

2 cloves of garlic, minced

1/2 cup of water

2 cups of cooked quinoa

1/4 tsp salt

1/4 tsp pepper

2 tbsp fresh parsley

1 tsp fresh thyme

 

Cut the top quarter off of each squash and remove and discard seeds. Turn the squash upside down in a microwavable dish with about 1 inch of water and microwave for 15 minutes on high. Meanwhile, preheat the oven to 350 degrees. Cut the sausage into very small pieces and sauté for a few minutes. Set sausage aside and add onions, carrots and garlic to the pan and sauté for a couple of minutes. Then add 1/2 cup of water to the pan, bring to a boil and let simmer for 6 or so minutes (until carrots are soft). Mix together sausage, carrot mixture, quinoa, parsley, thyme, salt and pepper and half the cheese. Stuff into squash. Put stuffed squash on baking sheet and into the preheated oven for 20 minutes. Then remove, set the oven to broil, add the remainder of the cheese to the top of each squash and put them into the broiler for 4 mins. Let cool before serving.
